Lammikkeeksi / To warm up


Hyytava tuuli on puhkunut ja puhaltanut talon nurkissa. Tonon luulisi nousevan ilmaan ja lentavan Kansasiin Dorothyn talon tavoin. Onneksi ei sentaan. Lammikkeeksi siis keittoa.

The freezing wind has been huffing and puffing at the corners of the house. You would think the house will fly away to Kansas like Dorothy's house. Luckily it's staying put. To warm us up: soup.


Grandma D.'s meatball soup

2,3l / 10cups water
5 tbls beef bullion
1,5 tsp garlic
1,5 tsp salt
1,5 tsp pepper
3 tbls coriander (also known as cilantro)
2 tbls basil
3 bay leaves
1 can diced tomatoes
3 carrots cut up
1 onion cut up
2,25dl / 1cup celery cut up
500g / 1lb ground beef
1tsp garlic
2tbls grated parmesan cheese
2,25dl / 1cup elbow macaroni

Put the 12 first ingredients in the pot and mix. If needs be, use ready made beef broth or make it according the water amount in a preferred way. Boil for 20 mins.
Mix the beef, garlic and parmesan cheese together and make bite size meatballs. (I personally use about a bit more than 1dl / 1/2cup or parmesan cheese. Gives them more flavour.)
After the the 20mins of boiling, drop the meatballs in and add the macaroni. (Again I like to use more macaroni than in the recipe and you can use what ever kind of macaroni you like.) Cook until the noodles are done.
